Drying Sliced Fresh Potatoes

Today I dried my own sliced fresh potatoes...(well, not my own as in I grew them, but I'll be starting them in the garden soon!). I took 5 medium size spuds and cut them, dipped them in boiling water for 8 minutes, then plunged them into icy water for 10 or so, then dried them in the Excalubur dehydrator for six hours, then put them in a Food Saver bag.

I’m thrilled! I’m not sure what I’ve saved, since I used all that electricity, but it’s my own stuff.

It will take up less room to store, that's for sure!
