Dried Dehydrated Eggs

Last night I dehydrated about two dozen eggs that my friend Jan gave me from her chickens.  They were very fresh and good, and I dried them for about 10 hours in my dehydrator, then ground them up.  Great results. Sorry for the blurry image, but you get the idea.

I can use them anytime I need eggs in a recipe, fun and so inexpensive compared to buying!

I've done that!!! Great minds think alike. Our chickens are giving more eggs than I know what to do with, so we'll be buying some more of the sheets for the Excalibur so I can dry more than a tray at a time.

You can use plastic wrap and it works just fine. My problem though was when I tried to do it without cooking them into scrambled eggs..they wanted to run all over the place. So I think I prefer the making into scrambled eggs first and then dry. Cool stuff isn't it! I love this stuff! :)
