Today - Cajun Potato Stew

This delicious, thick and hearty, spicy  stew is based on the famous Louisiana Cajun Sausage Gumbos, and goes great with my rustic breads.  Andouille sausage is used, but it may also be made completely vegetarian with ham TVP or by adding more potatoes.

So is this made with a dried andouille sausage? I've tried to find that type before online to buy but haven't been successful. Sounds good!

OH MY GOSH!!! This looks amazing!!! I think the sausage you by whole and dehydrate yourself right? Or can you actually buy it dried?

This looks absolutely yummy! You can dehydrate your own sausage right? Or does it have too high of a fat content?
